Figured I should let you know. GOS is an Operating System, which is different from ROM which is short for Read Only Memory. It’s like calling windows on your PC a ROM instead of an OS. It makes no sense.
I gotta get into Arch someday. How’s your experience so far? Easy to use? (I’m sure it is, the wiki is very detailed) Glad to see you like GOS
All apps work fine on grapheneos, besides above mentioned pay, some banking and auto.
Using sandboxed google play gmail and regular apps from play store work fine. :)

Ohh that is valid. I do miss that feature. Hopefully someday it is brought to AOSP

I think you should take the plunge, grapheneOS is very easy to install with the web installer https://grapheneos.org/install/web and an overall easy to use and setup os :)

Android uses the Linux kernal, so it is technically linux
These apps are open source, so a OS developer should be able to forward port the deprecated app into their newer OS release. Kinda fear monger a bit here
Fun fact: Android uses the Linux kernal. So they are also Linux phones.
I hate SMS as a whole. It needs to be replaced with something modern.
