I havent looked into these other formats because maildir works for me. I can saxe local backups, remoxe mail from the serveg, and even put it back later. All plain text.
Look into isync / mbsync in combination with maildir utils (mu/mu4e) or notmuch.

How to subscribe to a relay Only instance admins can subscribe to a relay. In Mastodon you can do that by going to Settings > Administration > Relays. There you can enter the url of the relay - add “/inbox” at the end of it. Then you just have to wait for your instance to be accepted by the relay owners

I set up nextcloud via docker on a raspberry pi and installed gpodder sync there. That is working for me.
