On Linux I set up OBS to capture my game window and from obs you are able to set the captured screen as a webcam stream.
On Linux I had to install some stuff to get a restream of the audio. It looped the game audio into a virtual mic.
So…
I Jitsi I just set my mic and video to the appropriate obs-made virtual cam and mic.
My upload maxes at 10mb/s
So I didn’t have the best luck with Jitsi. Definitely not full screen quality.
But OBS might come in handy if you find another way to stream.
OBS I believe is available for windows, Linux, and Mac.

I got obs to work with Jitsi but it’s low quality.
I use portainer for stacks so idk how you do it manually… But a stack with Gluetun and any apps that you use the VPN. I have Firefox(kasm) in my stack with the homepage set to ipleak to double check the VPN

I haven’t used lutris or wine/proto yet. Do you just sign into your steam account through lutris and it sets up the library automatically?
Is steams proton installed with steam now? Or do I have to get that somewhere else?
Why would I need to use lutris if the games are in steam big picture?
